This recipe is something I have made for years and it is always a crowd pleaser. My favorite thing about this recipe is that you can make it the night before 🙂 Enjoy this recipe from my kitchen to yours. I have included on how to make this recipe gluten – free below. I know this will sound very silly but this recipe really “sings” – meaning there are TONS of flavors that simply just work 😉

What You Need

  • flour tortillas ( corn if you want to make a gluten – free version)
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 Chopped Jalapenos ( seeded)
  • 2 teaspoons chopped green onion
  • 1/2 diced green pepper
  • 1/4 Teaspoon of Salt
  • 1/2 teaspoon of onion powder
  • 1/2 teaspoon of garlic powder
  • 1.5 Teaspoons of pepper
  • 12 ounces sharp Cheddar cheese, grated
  • Salsa
  • 1 Tablespoon of finely chopped cilantro
  • 1 Teaspoon of lime juice and plenty of zest
  • 1 Tablespoon of Olive Oil

What To Do

1) Heat oil in a pan and add green pepper, Jalapenos , and salt. Cook till tender about 10 minutes

2) In a medium-sized bowl mix – cream cheese, sour cream, cheddar cheese, onion powder, green onions, garlic powder, pepper, cilantro, lime juice; sauteed green peppers and sauteed Jalapenos.

3) Heat of the tortilla in the microwave ( just 30 seconds) it makes it easier to wrap.

4) Place a “healthy” amount of mixture on a tortilla – and spread.

5) Roll and Set aside. Keep repeating steps 4 and 5 till you run out of tortillas or mixture 🙂

The one up top is my gluten -free version using a corn tortilla.

6) Place your “rolls” ( covered tightly) in the fridge for at least 5 hours or overnight.
When ready to serve, cut each roll into 1/2-inch slices.

7) Sprinkle with lime zest. Serve with salsa.

Enjoy

FAQs

How do you keep tortilla roll ups from getting soggy? ›

Store any leftover pinwheel sandwiches in an airtight container—but not for too long! Gobbling them up within a day or two is the tastiest option. If you wait any longer, they can get soggy.

How long do pinwheels need to be refrigerated before cutting? ›

You can make these the day before you're ready to serve them and keep them wrapped, whole, in the fridge for at least 4 hours or up to 24. Just before serving, slice each tortilla pinwheel in 1/2- to 3/4-inch rounds and arrange on serving plate.

Can pinwheels be made night before? ›

Tightly roll up each of the tortillas and wrap each one in foil or plastic wrap; refrigerate the pinwheels overnight. Before serving, slice each roll up into ¼-inch slices. Arrange them on a platter or feed them to your ravenous family as you slice them. (Ask me how often this happens!)

Why are my pinwheels soggy? ›

Try to work quickly so it doesn't warm up. Otherwise, the fat in it will slowly melt, and you will end up with a soggy pastry instead of a nice and puffy one. After you roll up the "jellyroll," put it in the fridge or freezer for a few minutes to cool down.

Why do you dip tortillas in water? ›

You could set up a steamer, but much faster is to simply dip the tortilla in water and toss it straight on a hot surface. As the surface moisture evaporates, it steams the tortilla until it's soft all the way through. Meanwhile, the hot contact with the pan gives it some nice toasty browned spots.

How do you keep pinwheels from drying out? ›

Problem: The Pinwheels are Drying Out

Pinwheels made too far in advance can become dry or the flavours may not be as vibrant. Solution: If made ahead of time, store the rolls wrapped in plastic in the refrigerator and slice just before serving to keep them fresh on the inside.

Can I make tortilla dough the night before? ›

Some tortilla makers cover their dough and rest it overnight in the fridge, making it even easier to work with. There are a few reasons why this is so critical. It allows the dough to thoroughly and evenly hydrate, creating a consistent mix that cooks the same way every time.

What knife is best for cutting pinwheels? ›

A serrated knife works the best in cutting through all the layers. We first cut off the ends of the roll (if they are uneven) then slice roll into 12 equal pieces. I find the easiest way to do this is to slice the roll in half, then in half again so you have 4 equal pieces.

Can I freeze tortilla roll ups? ›

I freeze up to 1 month. Let them thaw in the fridge before serving. I love making these ahead of game day and then they're ready to go when we want to celebrate.

Why are my tortillas hard to roll? ›

What makes flour tortillas hard is not adding enough lard or oil and water and not kneading the dough for the required amount of time, and NOT allowing the dough to rest in a warm place at least 30 minutes before making flour tortillas.

What are rolled up tortillas called? ›

A taquito (Spanish pronunciation: [taˈkito], Spanish for "small taco"), taco dorado, rolled taco, or flauta ( Spanish pronunciation: [ˈflawta], Spanish for "flute") is a Mexican dish that typically consists of a small rolled-up tortilla that contains filling, including beef, cheese or chicken.

How long do pinwheels stay good? ›

These pinwheels taste great both warm and at room temperature, so they're ideal for entertaining. How Long will Pinwheels Keep in the Refrigerator? You can store pinwheels in the refrigerator for up to 4 days. Make sure to reheat them in the oven before serving so the pastry can crisp back up.

When should the rolled puff pastry be rested in the fridge? ›

It's always recommend to leave pastry resting in the fridge for at least an hour so the butter can cool back down and the gluten can relax. This will generally make for better eating.

How long does it take to reheat pinwheels? ›

You can absolutely enjoy these cold, but if you want to reheat them I recommend using an oven or an airfryer, rather than a microwave. To ensure they stay nice and crispy rather than getting soggy. In the oven, try 5-10 minutes at 160C. In the airfryer, 5 minutes at 160C does the job nicely.
