Okay, seriously… is it even possible to dislike pancakes? I could literally eat them for any meal of the day. For real. I’ve seen recipes for flour-less pancakes in the past, but never dared to try them myself. For what? I was perfectly happy with my go-to pancake recipe.
Well over the past few months, I’ve been trying to cut back on white flour (just a bit) and explore other interesting breakfast options like this Chia Seed Pudding Parfait. These were both really tasty options, but I missed hot breakfast meals! I’m so glad I discovered these flour-less pancakes! I could eat a whole stack and not feel guilty about them one bit!
As you can see from the recipe below, there’s no refined sugar and NO flour! Just a few simple ingredients (that you probably already have) and you’re ready to enjoy a nice stack of flour-less pancakes in just a few short minutes. Over the past two weeks, I’ve eaten these at least 3 or 4 times… and I plan to make more this weekend! I can’t get over how easy they are.
When making these pancakes, you have two options: a ripe banana or unsweetened applesauce. If you enjoy banana-flavored foods, you’ll definitely want to use the banana option. If you prefer more of a neutral taste, you’ll want to go with the unsweetened applesauce (this one was my fav). Want to know an added bonus? These flour-less pancakes are oil-free too! Just use a non-stick pan and you don’t have to use cooking spray to keep them from sticking!

Flour-less Pancakes
Easy, vegan flour-less pancake recipe that's made using oats instead of traditional flour. A delicious alternative to traditional pancakes!

Ingredients
- 1 cup + 2 tbsp rolled oats (I used quick oats)
- 1/3 cup unsweetened applesauce (or sub one ripe banana)
- 1 tsp vanilla extract
- 1 tbsp baking powder
- 1/2 cup unsweetened almond milk
- 2 tbsp pure maple syrup (or agave)
- 1/4 tsp salt
Instructions
Preheat nonstick pan to medium-low heat.
Combine all ingredients to a blender until mixture is smooth.
Measure out each pancake using a 1/3 measuring cup and add to hot nonstick pan. Once the pancake begins to bubble on the top, flip and continue to cook until lightly browned.
Remove from heat when done and complete the process until all batter has been cooked. Serve with your favorite fruits and top with maple syrup. Enjoy!

These are now our ‘go-to’ indulgence! My daughter said they were the “best healthy pancakes” she’s ever had. Also, the recipe is super simple; it took no time to make it. Next time, I will double the batch and try omitting the maple syrup since we also used it as a drizzle topping. Thanks for sharing!-

Absolutely delicious! They came out so fluffy I added ground flaxseed and I was very pleased that it did not change the consistency at all! These are definitely our new go to pancakes. I doubled the recipe so we had extra and they are just as good popped in the toaster on day two!

This was an epic failure. I used all the ingredients listed and followed the instructions and the result was a mushy glob of mess. I am so disappointed.

These pancakes are SO good!!! This recipe will become a regular weekend menu item for me! As someone who doesn’t like bananas, I was SO excited to find a recipe for healthy pancakes that offered up apple sauce in place of bananas. This recipe did NOT disappoint!!! I added frozen blueberries and drizzled with maple syrup. 10/10 Like a bowl of oatmeal but in pancake form 🙂 -

So good and super easy! I’ve had hard time finding fluffy vegan pancakes that are also gluten free, and these are so fluffy and good. I added some blueberries and it was so amazing! -

Put👏🏾Mexico👏🏾 City 👏🏾on👏🏾 your 👏🏾travel👏🏾list!👏🏾 During a recent trip to CDMX I had the chance to stay in different parts of the city, one of those being Centro. While this area didn’t have as many vegan options as other neighborhoods, I found some delicious options! @palipalimexico - loved being able to try vegan versions of traditional Mexican food. I ate here at least 3-4 times! @churreriaelmoro - did you really go to Mexico if you didn’t have a churro?! These churros are so delicious, you’ll wanna order a few!😉 @veguerrero_taqueria - don’t sleep on this spot. Those tacos HIT!😋 @vegamo.mexico - I never dreamed that pickled onions on a waffle would be so good! I visited this spot a few times during my trip and everything was delicious! If Mexico City isn’t on your list of places to visit in 2024, it def should be!!🇲🇽 Over the course of 3.5 weeks I ate at a lot of great places, but these were my absolute favs: @palipalimexico - That sandwich changed my life! 🙌🏾 Their menu has lots of options and I ate here at least 3 times during my visit😋 @por_siempre_vegana_taqueria - seriously the best tacos in all the land. I’m salivating just thinking about it🤤 plus their traditional baked goods were top notch. @lapitahayavegana - this places is oozing with creativity and deliciousness. How can you say no to pink tacos?! The chilaquiles was probably my fav dish. I at here repeatedly with no problem! @nievedeolla - I was reaaaally nervous about trying sugar-free ice cream, but this place was amazing! Their ice cream flavors were unique and all of their cones are made in house. They also use edible spoons! @goysburgers - is perfect American inspired comfort food that hit the spot every time. They’ve got multiple locations throughout Mexico City. What are some of your fav CDMX vegan spots?
