Ingredients

  • 3 cups all-purpose flour
  • 1 tbsp ground cinnamon
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp vanilla extract
  • ½ cup oil
  • ½ cup applesauce
  • ½ cup milk
  • 3 cups diced peaches
  • 3 eggs lightly beaten
  • 1 cup brown sugar

Streusel Topping

  • cup brown sugar
  • 1 Tbsp flour
  • 1 Tbsp butter, diced or shredded into small pieces
  • ¼ tsp ground cinnamon

Instructions

  • Preheat oven to 375°F and line or grease your muffin pans.

  • In a large bowl, mix together the flour, cinnamon, baking soda, and salt.

  • In a separate bowl, mix the oil, applesauce, vanilla, eggs, sugar, and milk.

  • Stir your wet mixture into your dry mixture.

  • Add in peaches, butdon't over mix!Instead, lightly fold your batter until they're fully combined.

  • Fill each muffin cup halfway with batter, then set aside while you make the streusel topping.

Streusel Topping

  • Mix the brown sugar, cinnamon, and flour in a bowl.

  • Incorporate butter with a fork until it's a coarse texture.

  • Sprinkle over top of each muffin.

  • Place muffins in the oven and bake for 25 minutes or until a toothpick inserted into the center comes out clean.

  • Once muffins are done, let cool in muffin pan for 10 minutes.Then, transfer to wire cooling rack to finish cooling the rest of the way.
