How To Make A Microwave Mug Brownie

If you’re looking for the easiest brownie recipe, this is it. If you’re looking for the fastest brownie recipe, this is also it. Here’s how you make it (and don’t forget to get the full written recipe, with measurements, down below):

  1. In a medium microwavable mug (roughly 1 cup measurement) mix together the flour, cocoa powder, brown sugar, and salt — yes, you can do this right in the mug!

  2. In to the dry ingredients add in the milk, oil, and vanilla extract and mix together until you form your batter. Combine it, but be sure not to overmix.

  3. Mix in the chocolate chips. (If you don’t want to cook them off straight away, then place them in the refrigerator for up to 24 hours!)

  4. Microwave for 1 minute 40 seconds – 1 minute 50 seconds or until it has risen and the batter doesnt look wet. (Timing is based on my 1200W microwave so your timing might vary).

The Secret To My Mug Cake & Brownie Recipes!

Mug cakes made in the microwave are no longer dried wrinkled-up cakes at the bottom of your mug. When you microwave a mug dessert, you’re actually steaming the batter so it micro-bakes up moist and delicious. Just be sure not to overcook your brownie.

Recipe Notes

Cocoa is an acid ingredient - if you find it too strong adding a pinch of bicarbonate of soda will mellow it out or - reduce the amount of cocoa

Cooking time will vary greatly depending on your microwave and the width and depth of the mug.

Always keep a close eye on your mug while in the microwave so it doesn’t overflow or overcook

Nutritional value: The calories are high due to sugar and oil. To lower these you can use more natural sugars and oil like coconut.

Gemma,

I made this this past week and it was not something that I would make again. It was to chocolatey and a little dry and I only cooked it for 45 seconds. I think it needs a little egg. It tasted like I was eating pure cocoa.

I would hardly call this a brownie. Everything I wanted wasn’t there. I tried eating it with ice cream but it just wouldn’t offset the almost bitter taste by virtue of it being drowned in cocoa powder. Maybe if you added less cocoa powder and added some milk or eggs or something it would taste better but I’m not willing to try as I didn’t even finish eating mine and had to wash out my mouth after suffering through a few bites. Maybe some people like this sort of taste but what I would think of when I think ofRead more »

Ooh, I used 2 tbsp cocoa powder instead of three and replaced water with milk. I tasted tooooo great, just like we get in the markets! At first I overcooked my brownie, and it wasn’t edible+I didn’t like the taste of coconut oil. Next time I cooked for 1 min 20 sec and used canola oil and it took me to heaven 🤤

I’ve had my fair share of chocolately mug recipes, but this one takes the cake! Or.. the brownie?! Rich, soft, and full of delicious chocolate, how can you go wrong?! This recipe easily halves if you’re looking for just a taste — just be sure to watch that cook time! Ice cream on top is definitely not optional! 🙂

you should add milk to the mix so that the brownie is not dry. The milk will make it a bit more moist.

This is pretty good……….. But I think it would be a tiny bit better if you add milk and less cocoa powder (Mine was kinda bitter). I added some cinnamon and peanut butter and it tasted AMAZING.

ps. It took me 2 minutes to cook

Since I don’t have any ice cream, vanila extract and no chocolate chips, I won’t buy any for the recipe bc I’m lazy😂. Will this ruin the taste ?

Quarantine has made me bored and craving something sweet. This brownie recipe was the perfect fit for that! I put mine in the microwave for a minute and it was great! I was skeptical because it looked dry, but once I tasted it, it was very good. For next time, though, I would add a tablespoon or so of milk so that it dilutes the cocoa powder taste. Still very good though. Make sure to let It cool before you eat!

FAQs

Why do you put coffee in brownies? ›

The trick: Replace the water with coffee. You don't need much, generally ¼ to ⅓ cup. We already know that adding espresso and coffee flavor to chocolate desserts supercharges chocolate flavor, and the same principle applies here. Using coffee in your brownie mix will result in better, more chocolaty brownies.

Should I add instant coffee to brownie mix? ›

The first and easiest upgrade you can give to your boxed brownie mix is to add a tablespoon of instant coffee to the batter. Adding coffee to your brownies boosts their flavor because its bitter quality balances out sweetness, making it less overpowering. It allows that delicious chocolate flavor to really shine.

Why do you put milk instead of water in brownies? ›

One change is to use milk or heavy cream instead of water. This change will make brownies more moist and gooey since milk is more fatty and flavorful than water. A second change is to use butter instead of oil. For similar reasons to using milk, butter adds a rich and more decadent quality to the batter.

Should you chill brownie batter before baking? ›

In addition to keeping your brownie mix fresh, refrigerating brownie batter can also help boost the overall texture and flavor of the treat. Refrigerating helps improve the gloss and crustiness of brownies while simultaneously blending the flavors—the result? — brownie that tastes much richer and chewier.

Can I use butter instead of oil in brownie mix? ›

You can absolutely substitute butter for the vegetable oil. Use the same quantity specified in the directions (for example, if it calls for 1/3 cup of oil, use 5 1/3 tablespoons of butter). Melt it down, then let it cool a bit. You might not ever go back to oil!

What can I add to brownie mix to make it better? ›

Adding one large egg plus an extra egg yolk gives brownies an ultra fudgy texture. Chocolate Chips – Even if your brownie mix contains chocolate, plan to add chocolate chips. The additional sugar from the chocolate chips creates a shiny, crackly top as the brownies bake.

Can I add brewed coffee to brownie mix? ›

All it requires is that, when making brownies from a mix, you replace the water with brewed coffee or espresso. It doesn't get easier than that—and, rather than sending it down the drain, the trick is a great way to repurpose any leftovers from your morning cup o' Joe.

What does coffee do in baking? ›

According to Wanders, coffee contributed to a better rise, crumb structure, and even toasty and well-browned crust with delicious bitter notes. Brewed coffee can also be added to high-moisture baked goods like brownies and cakes where the sweetness of the desert helps carry coffee's flavor and aromas.

Why do people add coffee to chocolate? ›

Add espresso powder or instant coffee to dry ingredients and chocolate sauces. Adding a teaspoon of espresso powder goes a long way towards enhancing chocolate flavors in your cooking. Since espresso powder is typically fine-ground, it dissolves in batters and doughs easily.

Why do you put coffee in a cake? ›

Coffee is made for baking. Its rich, bittersweet flavour adds depth to cakes, cheesecakes, pies, cookies, muffins, loaves, and soufflés. It boosts the chocolatey appeal of Fudge Layer Cake with Chocolate Avocado Icing, Coffee Brownies and soft, fudgy Coffee Chocolate Crinkle Cookies.

Why is coffee good in chocolate cake? ›

All we know is that adding a bit of coffee to chocolate desserts amplifies chocolate's flavor without adding any discernible coffee taste. Think of it as a supporting cast member who lets the star shine, much like salt enhances the flavor of cookies that could otherwise fall flat, without adding savory flavor.
